The grapes for this wine are picked up in the night, to avoid the oxidation, keeping the polyphenols. After cold maceration in order to extract the fine tannins, the fermentation begins. After
the stabilization, the wine goes through the malolactic fermentation inside French oak barrels. Then, the wine refines finally during during 12 months in French oak.
